For centuries, traditional coffee roasting was completely done over an open fire.

When the Eithiopian goat herders discovered coffee, they also discovered that placing the beans on hot rocks from a camp fire transformed the dense seeds into an invigorating, pallatable food.

Later, roasting consistency and volume were maximized by the construction of the drum roaster. This consisted of a suspended drum that was hand cranked over an open fire to acheive even cooking.

About our Family

Near the base of Mt. St. Helens in the heart of Dole Valley Washington, Millars Fine Roasted Coffee has been in the specialty coffee industry since 1989. Family owned and operated, Millars uses only 100% of the highest quality arabica coffee beans.

Each one of these batches are roasted by hand

Roasting with the traditional old world, cast iron, Turkish drum roaster, heat is consistently radiated to bring out the full flavor of the beans without burning them. Each one of these batches are roasted by hand and with meticulous attention to detail, insuring that each blend is perfect. We have specifically designed our coffee blends to be versatile enough to be used as espresso or a drip blend.

At Millars Fine Roasted coffee, we believe in hand selecting a variety of local, hardwood blends to enhance the flavor of our coffee. Because of the responsibility we have toward our environment, selected trees are derived from natural hazards and storms. We don’t beleive in the cutting of healthy growing timber.

About Barrel Aging

Historically, the most common way of storing and transporting goods was by the use of handmade, wooden barrels. Barrels were highly valuable and often reused by merchant shippers who carried their goods around the world.

Experience a whole new flavor of Coffee

Often green coffee was stored in barrels that had previously held commodities such as rum or whiskey imparting a new and unique flavor to the beans. Millars coffee beans are aged in oak barrels for up to 30 days. The infused flavors are as authentic and remarkable as the process itself.
